🍆🇫🇷 Caviar d’Aubergine
A smoky eggplant spread, silky and flavorful — perfect with bread or as a dip 🌿🍆.
Ingredients:
• 2 eggplants
• 2 garlic cloves
• 3 tbsp olive oil
• Juice of 1 lemon
• Salt & pepper
Instructions:
1️⃣ Roast eggplants until skin is charred and flesh is soft.
2️⃣ Scoop out flesh and blend with garlic, olive oil, lemon juice, salt, and pepper.
3️⃣ Adjust seasoning and chill before serving.
4️⃣ Drizzle with extra olive oil before enjoying.
