Creamy Chicken with Mushrooms on Mashed Potatoes & Spinach
Ingredients:
✅ For the Chicken & Sauce:
• 2 boneless, skinless chicken breasts
• 1 tsp salt
• ½ tsp black pepper
• 1 tsp Italian seasoning
• 2 tbsp olive oil
• 2 tbsp butter
• 1 cup mushrooms, sliced
• 2 cloves garlic, minced
• 1 cup heavy cream
• ½ cup chicken broth
• ½ cup Parmesan cheese, grated
• 4 cups fresh spinach
✅ For the Mashed Potatoes:
• 4 large potatoes, peeled and cubed
• ¼ cup butter
• ½ cup milk
• Salt & pepper, to taste
Instructions:
1️⃣ Make the Mashed Potatoes:
• Boil cubed potatoes in salted water until fork-tender (about 15-20 minutes).
• Drain and mash with butter, milk, salt, and pepper until creamy. Set aside.
2️⃣ Cook the Chicken:
• Season chicken breasts with salt, pepper, and Italian seasoning.
• Heat olive oil in a large skillet over medium heat.
• Cook chicken for 5-6 minutes per side until golden brown and cooked through. Remove and set aside.
3️⃣ Prepare the Creamy Mushroom Sauce:
• In the same skillet, melt butter and sauté mushrooms for 3 minutes.
• Add minced garlic and cook for 30 seconds.
• Stir in heavy cream and chicken broth.
• Add Parmesan cheese and simmer until sauce thickens, about 3-4 minutes.
4️⃣ Combine Chicken & Sauce:
• Return the chicken to the skillet and coat with the creamy mushroom sauce.
• Simmer for 2 minutes to blend flavors.
5️⃣ Sauté the Spinach:
• In a separate pan, heat a drizzle of olive oil and sauté spinach until wilted, about 2 minutes.
6️⃣ Assemble & Serve:
• Place a generous scoop of mashed potatoes on each plate.
• Top with sautéed spinach.
• Add the creamy chicken with mushrooms over the top and spoon extra sauce.
