M&M's Chocolate Chip Cookie Dough Ice Cream Cake Roll ❤❤
Ingredients
For the Cookie Dough Layer
1 ½ cups all-purpose flour
½ teaspoon salt
½ cup unsalted butter, softened
½ cup brown sugar
¼ cup granulated sugar
2 tablespoons milk
1 teaspoon vanilla extract
½ cup mini chocolate chips
½ cup mini M&M's
For the Ice Cream Filling
2 cups vanilla ice cream (or chocolate chip cookie dough ice cream), softened
For the Chocolate Cake Roll
¾ cup all-purpose flour
¼ cup cocoa powder
½ teaspoon baking powder
¼ teaspoon salt
4 large eggs
¾ cup granulated sugar
1 teaspoon vanilla extract
¼ cup whole milk
For the Chocolate Ganache
½ cup heavy cream
¾ cup semi-sweet chocolate chips
Instructions
Step 1: Prepare the Cookie Dough Layer
In a bowl, whisk together flour and salt.
In a separate large bowl, beat butter, brown sugar, and granulated sugar until creamy.
Add milk and vanilla extract, mixing until combined.
Slowly mix in the flour mixture until dough forms.
Fold in mini chocolate chips and M&M's.
Roll the dough into a rectangle (about 10x15 inches) between two sheets of parchment paper.
Freeze for at least 30 minutes.
Step 2: Make the Cake Roll
Preheat oven to 350°F (175°C). Line a 10x15-inch jelly roll pan with parchment paper.
In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
In another bowl, beat eggs and sugar until thick and pale. Stir in vanilla extract.
Gradually mix in dry ingredients, alternating with milk, until smooth.
Pour batter into the prepared pan, spreading evenly.
Bake for 10-12 minutes until the cake is set but still soft.
Immediately roll the cake (with parchment) from the short side into a log shape. Let cool.
Step 3: Assemble the Cake Roll
Carefully unroll the cooled cake and spread softened ice cream over it.
Place the chilled cookie dough layer on top of the ice cream.
Gently roll the cake back up, using parchment paper to guide it.
Wrap in plastic wrap and freeze for at least 4 hours (or overnight).
Step 4: Make the Ganache & Decorate
Heat heavy cream in a saucepan until steaming (do not boil).
Pour over chocolate chips and let sit for 1 minute, then stir until smooth.
Pour the ganache over the frozen cake roll and top with extra M&M's.
Freeze for another 30 minutes before slicing and serving.
