Ingredients:
2 cups fresh figs, chopped
1 cup sugar
2 cups heavy cream
1 cup whole milk
1 tsp vanilla extract
1 tbsp lemon juice
Pinch of salt
Instructions:
Cook Figs: In a medium saucepan, combine the chopped figs and 1/2 cup of sugar. Cook over medium heat, stirring occasionally, until the figs are soft and the mixture has thickened, about 10 minutes. Let it cool slightly.
Blend Mixture: Transfer the fig mixture to a blender or food processor and blend until smooth. Add lemon juice and blend again. Set aside to cool completely.
Mix Cream Base: In a large bowl, whisk together the remaining 1/2 cup of sugar, heavy cream, whole milk, vanilla extract, and a pinch of salt until the sugar is dissolved.
Combine Mixtures: Stir the cooled fig puree into the cream mixture until well combined.
Chill Mixture: Cover the mixture and refrigerate for at least 2 hours, or overnight, to chill thoroughly.
Churn Ice Cream: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions, usually about 20-25 minutes.
