🛒 Ingredients:
8–10 chicken drumsticks or thighs 🍗
600g potatoes, peeled and diced 🥔
1 red bell pepper, chopped 🫑
1–2 carrots, sliced 🥕
1 small head of broccoli, cut into florets 🥦
3 tbsp olive oil 🛢
2 garlic cloves, minced 🧄
2 tsp dried herbs (oregano, thyme, rosemary mix) 🌿
Salt & pepper to taste 🧂
Optional: lemon juice or zest 🍋
👩🍳 Instructions:
Preheat oven to 200°C (390°F). In a large bowl, mix chicken, potatoes, bell pepper, carrots, and broccoli with olive oil, garlic, dried herbs, salt, and pepper. Toss everything well to coat. Transfer to a baking dish in a single layer. Bake for 40–45 minutes, turning chicken halfway through for even browning. The chicken should be golden and cooked through, and the veggies tender. Drizzle with a little lemon juice before serving if desired.
