600g potatoes, peeled and diced 🥔

1 red bell pepper, chopped 🫑

1–2 carrots, sliced 🥕

3 tbsp olive oil 🛢

2 garlic cloves, minced 🧄

2 tsp dried herbs (oregano, thyme, rosemary mix) 🌿

Salt & pepper to taste 🧂
