Carrot Poke Cake
Ingredients:
2 cups grated carrots
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
2 large eggs
1/2 cup vegetable oil
1/2 cup unsweetened applesauce
1 teaspoon vanilla extract
1 (14 oz) can sweetened condensed milk
For the Cream Cheese Frosting:
8 oz cream cheese, softened
1/4 cup unsalted butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract
Optional topping: crushed graham crackers or walnuts
Directions:
Preheat oven to 350°F (175°C). Grease a 9x13-inch baking pan.
In a large bowl, mix together flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
In another bowl, whisk eggs, oil, applesauce, and vanilla extract until well combined.
Pour the wet mixture into the dry ingredients and stir until just combined. Fold in the grated carrots.
Pour the batter into the prepared pan and bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
While still warm, poke holes all over the cake using the handle of a wooden spoon.
Pour the sweetened condensed milk evenly over the cake, letting it soak into the holes. Let cake cool completely.
For the frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla and beat until creamy.
Spread the frosting over the cooled cake and top with crushed graham crackers or nuts if desired.
