Sweet and Spicy Honey Jalapeño Peach Glazed Chicken Thighs
Ingredients:
6 boneless, skinless chicken thighs
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/4 teaspoon smoked paprika
1 cup peach preserves
2 tablespoons honey
1 tablespoon Dijon mustard
1 jalapeño, finely diced (seeds removed for less heat)
1 tablespoon apple cider vinegar
Fresh thyme or chopped parsley, for garnish
Directions:
Pat chicken thighs dry with paper towels and season with salt, pepper, garlic powder, and smoked paprika on both sides.
Heat olive oil in a large skillet over medium-high heat. Sear the chicken thighs for 4-5 minutes per side until golden and cooked through. Remove and set aside.
In the same skillet, reduce heat to medium and add peach preserves, honey, Dijon mustard, diced jalapeño, and apple cider vinegar. Stir well until the mixture begins to bubble and thicken slightly, about 2-3 minutes.
Return the chicken thighs to the skillet and spoon the glaze generously over the top. Let simmer for 3-5 minutes, allowing the chicken to absorb the flavors.
Garnish with fresh thyme or parsley before serving.
