Lemon Shortbread Cookies Recipe

Ingredients
1 cup unsalted butter, softened

Instructions
Preheat the oven: Preheat your oven to 350F 175C. Line a baking sheet with parchment paper.
Cream the butter and sugar: In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
Add flavorings: Mix in the lemon zest and vanilla extract until well combined.
Combine dry ingredients: In a separate bowl, whisk together the all-purpose flour and salt. Gradually add the flour mixture to the butter mixture, blending until the dough comes together.
Shape the dough: Turn the dough out onto a lightly floured surface and roll it into a log shape. Wrap the log in plastic wrap and refrigerate for at least 30 minutes to firm up.
Slice and bake: Remove the dough from the refrigerator and slice it into 1/4-inch thick rounds. Place the rounds on the prepared baking sheet, spacing them about 1 inch apart.
