Slow Cooker Beef Brisket

Ingredients:
- 3 to 4 pounds beef brisket
- 1 large onion, sliced
- 4 cloves garlic, minced
- 1 cup beef broth
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons Worcestershire sauce
- 2 teaspoons smoked paprika
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
- 1/2 teaspoon salt
- 3 carrots, chopped
- 3 stalks celery, chopped
- Fresh parsley, for garnish (optional)

Directions:
1. Start by seasoning the brisket with salt, black pepper, and smoked paprika. Rub the spices into the meat thoroughly.
2. Heat a large skillet over medium-high heat. Sear the brisket on all sides until a brown crust forms, about 4-5 minutes per side. Remove from heat and set aside.
3. In the slow cooker, combine the sliced onion, minced garlic, carrots, and celery. Lay the seared brisket on top of the vegetables.
4. In a separate bowl, whisk together the beef broth, soy sauce, brown sugar, Worcestershire sauce, thyme, and remaining spices until well mixed. Pour the mixture over the brisket.
5. Cover the slow cooker and cook on low for 8-10 hours, or until the brisket is fork-tender.
6. Once cooked, carefully remove the brisket and let it rest for about 15 minutes before slicing. Serve with the cooked vegetables and the delicious sauce from the slow cooker. Garnish with fresh parsley, if desired.
