Keto Garlic Parmesan Brussels Sprouts
Ingredients
1 lb Brussels sprouts, trimmed and halved
2 tbsp olive oil (or avocado oil)
2 cloves garlic, minced
½ tsp salt
¼ tsp black pepper
¼ cup grated Parmesan cheese
Optional: 2 tbsp crispy bacon bits
Instructions
Preheat oven
Set oven to 400°F (200°C).
Prepare sprouts
In a large bowl or bag, toss Brussels sprouts with olive oil, garlic, salt, and pepper.
Roast
Spread sprouts evenly on a baking sheet lined with parchment.
Roast for 20–25 minutes, flipping halfway through, until golden brown and crispy on the edges.
Finish
Sprinkle Parmesan cheese and bacon bits (if using) over the hot sprouts.
Serve immediately.
Tips
Add a squeeze of lemon juice before serving for brightness.
For a spicy version, toss with red pepper flakes or drizzle with sugar-free sriracha mayo.
Store leftovers in the fridge up to 3 days and reheat in an air fryer for crispiness.
