🛒 Ingredients
For the Chicken:
2 large chicken breasts
1 tbsp olive oil
1 garlic clove, minced
1 tsp dried oregano or thyme
Salt & pepper
For the Potatoes:
500g baby potatoes, halved
1 tbsp olive oil
Salt & pepper
1 tbsp fresh parsley, chopped
For the Creamy Herb Pasta:
250g penne pasta
1 tbsp butter
200ml heavy cream
50g Parmesan cheese, grated
2 tbsp fresh parsley, finely chopped
Pinch of nutmeg (optional)
Salt & pepper
👩🍳 Method
Prepare potatoes: Toss halved potatoes in oil, salt, and pepper. Roast at 200°C (400°F) for 30–35 minutes until golden. Sprinkle with parsley.
Cook pasta: Boil penne in salted water until al dente. Drain.
Make pasta sauce: In a pan, melt butter, add cream, Parmesan, nutmeg, salt, and pepper. Simmer until slightly thickened. Stir in parsley and pasta.
Grill chicken: Rub chicken with oil, garlic, oregano, salt, and pepper. Grill or pan-sear for 6–7 minutes per side until cooked through (74°C / 165°F). Slice.
Assemble: Serve grilled chicken with creamy herb pasta and roasted potatoes.
