Creamy Ground Beef, Potato & Vegetable Soup
Ingredients:
1 lb ground beef
4 cups diced potatoes
1 cup carrots, diced
1 cup peas (fresh or frozen)
1 small onion, diced
3 cups beef broth
1 cup heavy cream or half-and-half
2 tablespoons flour (optional, for thickening)
2 tablespoons butter or oil
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions:
In a large pot, brown the ground beef over medium heat; drain excess fat.
Add butter or oil, then sauté onions and carrots until tender.
Stir in flour if using, cook for 1-2 minutes.
Add diced potatoes and beef broth; bring to a boil and then simmer until potatoes are tender (about 15 minutes).
Stir in peas and heavy cream; cook for 5 more minutes.
Season with salt, pepper, and garnish with parsley.
Serve hot with crackers if desired.
