Homemade Keto Cheddar Garlic Biscuits

🧀 Ingredients
1 ½ cups blanched almond flour
1 tbsp coconut flour (optional, helps texture)
2 tsp baking powder
½ tsp garlic powder
¼ tsp salt
2 large eggs
⅓ cup sour cream (or plain Greek yogurt)
¼ cup melted butter
1 cup shredded sharp cheddar cheese
(Optional) 1 tbsp chopped chives or parsley for color

2 tbsp melted butter
½ tsp garlic powder
Pinch of parsley flakes

1. Preheat
Set your oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. Mix the Dry Stuff
In a large bowl, combine almond flour, coconut flour, baking powder, garlic powder, and salt.
Whisk it lightly to break up clumps.
3. Add Wet Ingredients
Stir in eggs, sour cream, and melted butter until a thick dough forms.
It should be soft but not sticky.
4. Fold in the Cheese
Add shredded cheddar and mix just until evenly combined.
(You can toss in a handful of mozzarella too for that gooey pull!)
5. Shape & Bake
Scoop about 2 tablespoons of dough per biscuit onto the baking sheet — don’t flatten them; let them puff up naturally.
Bake for 14–16 minutes, until golden brown on the edges.
6. Brush with Garlic Butter
While warm, brush each biscuit with the garlic butter mixture.
Let them cool slightly (if you can resist).

For extra fluffiness, add ½ tsp apple cider vinegar to the wet mix.
