Streusel Topping:

5 tablespoons partially melted butter
½ cup all-purpose flour
½ cup packed light brown sugar
½ teaspoon ground cinnamon
Cinnamon Glaze:

¼ cup melted butter
1 cup powdered sugar
2 tablespoons milk (whole or 2%)
½ teaspoon pure vanilla extract
½ to 1 teaspoon ground cinnamon (adjust to taste)

Prep the Pan & Dough:
Preheat your oven to 400°F (200°C). Generously butter a standard 10-cup muffin tin. Unroll each cinnamon roll and gently press one into the bottom of each muffin cup, carefully stretching the dough up the sides to form a well. Avoid thick dough at the base so there’s ample room for filling.
Prepare the Apple Filling:
In a medium bowl, combine diced apples, brown sugar, cinnamon, lemon juice, and melted butter. Stir in the cornstarch slurry. Microwave on high for 2–3 minutes, stirring every 60 seconds, until apples are slightly softened and the mixture thickens into a glossy syrup. Fill the Rolls:
Using a slotted spoon to drain excess liquid, spoon the warm apple filling into each cinnamon roll well, mounding it just to the rim of the muffin cup.
Add Streusel & Bake:
