Ingredients

1 lb (450g) white fish fillets (such as cod or tilapia), cut into chunks
1 can (14 oz) coconut milk
2 tablespoons red curry paste
1 tablespoon fish sauce (or soy sauce for a vegetarian option)
1 tablespoon brown sugar
1 onion, chopped
3 cloves garlic, minced
1 inch fresh ginger, grated
1 bell pepper, sliced
Juice and zest of 1 lime
Fresh cilantro, chopped (for garnish)

For the Jasmine Rice
1 cup jasmine rice
2 cups water
Pinch of salt
Instructions
Prepare the Jasmine Rice
Cook Rice: In a medium saucepan, combine jasmine rice, water, and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the rice is tender and the water is absorbed. Remove from heat and let sit covered for 5 minutes.
