🛒 Ingredients:
For the Chicken 🍗
2 boneless, skinless chicken breasts
1 tbsp soy sauce
1 tbsp honey
1 tsp rice vinegar
1 tsp sesame oil
1 garlic clove, minced
1/2 tsp grated ginger
Pinch of black pepper
For the Garlic Rice 🍚
1 cup jasmine rice
1 ½ cups water
1 garlic clove, finely chopped
1 tsp neutral oil (canola or vegetable)
Salt to taste
Chopped parsley or dried seaweed flakes for garnish (optional)
For the Stir-Fried Veggies 🥦🌶️
1/2 red bell pepper, sliced
1/4 red onion, sliced
1/2 zucchini, halved and sliced
1/2 cup broccoli florets
1 tsp soy sauce
1/2 tsp sesame oil
Pinch of chili flakes (optional)
1 tsp olive oil
For the Dipping Sauce 🌶️
2 tbsp soy sauce
1 tbsp rice vinegar
1 tsp honey
1 small red chili, finely chopped
1/2 tsp sesame seeds
👨🍳 Instructions:
Marinate the chicken: In a bowl, combine soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, and pepper. Add chicken and marinate for at least 15 minutes (up to 1 hour).
Cook the rice: Rinse jasmine rice until water runs clear. In a saucepan, heat oil and sauté garlic for 30 seconds. Add rice and water. Bring to boil, reduce to low, cover, and simmer for 15 minutes. Rest 5 minutes before fluffing.
Grill the chicken: Heat a grill pan over medium-high heat. Cook chicken 5–6 minutes per side until grill marks form and internal temp hits 74°C (165°F). Rest, then slice.
Stir-fry the vegetables: Heat olive oil in a pan. Add onion, bell pepper, zucchini, and broccoli. Stir-fry on high heat for 4–5 minutes until slightly charred but still crisp. Season with soy sauce, sesame oil, and chili flakes.
Make the dipping sauce: Mix soy sauce, rice vinegar, honey, chili, and sesame seeds in a small bowl.
Assemble: On each plate, place a mound of garlic rice, arrange sliced grilled chicken, and stir-fried vegetables. Serve with dipping sauce on the side. Garnish rice with parsley or seaweed flakes if desired.
Notes & Variations:
Swap chicken for tofu or salmon for a vegetarian or pescatarian twist.
Add mushrooms or baby corn to the veggies.
The dipping sauce also works great drizzled over the rice or chicken.
