🍚 Rice & Beans
• 2 cups cooked rice (white, brown, or cilantro-lime)
• 1 can black beans, drained & rinsed 🫘
• Salt & pepper, if needed

🌽 Corn Salsa
• 1 cup corn kernels (fresh, canned, or frozen & thawed)
• ¼ cup red onion, finely chopped 🧅
• 1 jalapeño, finely chopped (optional for heat) 🌶️
• Juice of ½ lime 🍋
• Salt & pepper, to taste

🥑 Guacamole (Quick & Easy)
• 2 ripe avocados, mashed 🥑
• Juice of ½ lime 🍋
• Salt, pepper, and garlic powder (to taste)

🥗 Toppings
• Shredded lettuce 🥬
• Shredded cheese (cheddar, Monterey Jack, or a blend) 🧀
• Extra sliced jalapeños (optional) 🌶️

🌶️ Creamy Lime or Chipotle Sauce
• Option 1 (Lime Crema): ½ cup sour cream (or Greek yogurt) + juice of ½ lime + pinch of salt
• Option 2 (Spicy Chipotle Sauce): ½ cup mayo (or sour cream) + 1 tbsp chipotle peppers in adobo (or to taste) + pinch of salt



🔥 Instructions
1. Marinate & Cook Chicken
• In a bowl, combine chicken strips with chipotle peppers, chili powder, cumin, minced garlic, olive oil, salt & pepper.
• Let marinate for at least 15 mins (longer for deeper flavor).
Grill or sauté chicken over medium-high heat until browned and fully cooked, about 5–6 mins per side.
2. Prepare Rice & Beans
• Cook your rice according to package instructions (or warm up pre-cooked rice).
• Season black beans lightly with salt & pepper if desired; warm them in a small saucepan or microwave.
3. Make Corn Salsa
• In a small bowl, combine corn, red onion, jalapeño (if using), lime juice, salt & pepper.
• Adjust seasoning to taste.
4. Mash Guacamole
• In another bowl, mash avocados with lime juice, salt, pepper, and garlic powder until smooth (or chunky, if preferred).
5. Mix Sauce
• Choose Lime Crema or Spicy Chipotle sauce (or both!). Whisk the ingredients together until smooth.
• Taste and adjust seasoning (more lime or chipotle as needed).
6. Assemble Burrito Bowls
• Start with a base of rice in each bowl.
• Top with black beans, chipotle chicken strips, corn salsa, guacamole, shredded lettuce, and cheese.
• Drizzle the sauce of your choice on top.
