Bourbon Chicken
Ingredients:
2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
2 tablespoons olive oil
1/4 cup bourbon
1/4 cup low-sodium soy sauce
1/4 cup brown sugar
2 cloves garlic, minced
1 teaspoon ground ginger
1/4 teaspoon crushed red pepper flakes (optional)
2 tablespoons cornstarch
2 tablespoons water
Cooked rice, for serving
Green onions, sliced, for garnish
Sesame seeds, for garnish
Directions:
Heat olive oil in a large skillet over medium-high heat.
Add chicken pieces and cook until browned on all sides, about 5-7 minutes.
In a small bowl, whisk together bourbon, soy sauce, brown sugar, garlic, ginger, and red pepper flakes.
Pour the sauce over the chicken in the skillet and stir to coat.
Reduce heat to medium-low and simmer for 10-15 minutes, or until chicken is cooked through and sauce has thickened.
In a separate small bowl, mix cornstarch and water until smooth. Stir the cornstarch mixture into the skillet and cook for an additional 2-3 minutes, or until the sauce has thickened further.
Serve the bourbon chicken over cooked rice, garnished with sliced green onions and sesame seeds.
