Ingredients:

2 cups cooked white rice
2 eggs
1 chicken breast, diced
100g peeled shrimp
1 carrot, diced
1/2 cup snow peas
2 spring onions (white and green parts separated)
2 tablespoons soy sauce
Salt and pepper to taste
Vegetable oil
Instructions:

Prepare the ingredients: Cook the white rice and let it cool. Beat the eggs and cook an omelet in a pan with a little oil. Remove the omelet, cut it into strips, and set aside.
Cook the chicken and shrimp: In the same pan, sauté the chicken until golden brown. Add the shrimp and cook until they change color.
Sauté the vegetables: Add the carrot, snow peas, and the white part of the spring onion. Cook for a few minutes until the vegetables are tender.
Combine everything: Add the cooked rice and mix well. Add the soy sauce and adjust the salt and pepper.
Add the tortilla: Mix the tortilla strips and the green part of the spring onion. Cook for 2-3 more minutes and serve hot.
