1 avocado, diced
1 cup roasted corn kernels (fresh or frozen, thawed)
½ cup cherry tomatoes, halved
¼ cup red onion, thinly sliced
Optional: black beans, bell peppers (roasted)
🌿 Cilantro Cream Sauce
½ cup sour cream (or Greek yogurt)
¼ cup fresh cilantro, chopped
1 tbsp lime juice 🍋

Pinch of sugar (optional)
Salt & freshly cracked black pepper to taste

1 cup cooked rice (white or brown) or quinoa

Instructions
Prepare the Steak
Pat the steak dry with paper towels.
In a small bowl, mix olive oil, chili powder, cumin, salt, and pepper. Rub the mixture all over the steak.
Heat a skillet or grill pan over medium-high heat.
Cook the steak for 3-5 minutes per side for medium-rare, or to your desired doneness.
Let the steak rest for 5-10 minutes before slicing it against the grain.
Roast the Corn (if using fresh)
Preheat oven to 400°F (200°C) or grill corn on the cob until kernels are tender and slightly charred. Cut the kernels off the cob. If using frozen corn, you can sauté it in a pan with a little oil until heated through and slightly browned.
Prepare the Cilantro Cream Sauce
