𝐃𝐎𝐄𝐒 𝐀𝐍𝐘𝐎𝐍𝐄 𝐇𝐄𝐑𝐄 𝐀𝐂𝐓𝐔𝐀𝐋𝐋𝐘 𝐒𝐓𝐈𝐋𝐋 𝐄𝐀𝐓 𝐀𝐦𝐚𝐳𝐢𝐧𝐠 𝐎𝐥𝐝 𝐅𝐚𝐬𝐡𝐢𝐨𝐧𝐞𝐝 𝐑𝐢𝐜𝐞 𝐏𝐮𝐝𝐝𝐢𝐧𝐠
Ingredients:
- 1 cup uncooked white rice
- 2 cups water
- 4 cups whole milk
- 1/2 cup granulated sugar
- 2 large eggs, beaten
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon (optional)
- 1/4 teaspoon salt
- 1/2 cup raisins (optional)
- 2 tablespoons butter
- Ground nutmeg for garnish (optional)
Instructions:
1. In a medium saucepan, bring 2 cups of water to a boil. Add the rice, reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the water is absorbed.
2. In a large saucepan, combine the cooked rice, 3 cups of the milk, sugar, and salt. Cook over medium heat, stirring frequently, until the mixture thickens, about 15-20 minutes.
3. In a separate bowl, beat the eggs with the remaining 1 cup of milk. Slowly add a small amount of the hot rice mixture to the egg mixture, whisking constantly to temper the eggs.
4. Gradually stir the egg mixture back into the rice pudding. Cook for another 5 minutes, stirring constantly, until the pudding thickens further.
5. Remove the pudding from heat and stir in the vanilla extract, butter, and raisins (if using).
6. Optionally, sprinkle the top with ground cinnamon and nutmeg before serving.
7. Serve warm or chilled, as desired.
