For the Curry 🍗
600 g chicken breast (cut into chunks)
1 tbsp olive oil or ghee
1 onion (finely chopped) 🧅
2 cloves garlic (minced) 🧄
1 tbsp fresh ginger (grated)
2 tbsp curry powder
1 tsp turmeric
1 red bell pepper (sliced) 🌶️
400 ml coconut milk 🥥
1 tbsp soy sauce
Juice of 1/2 lime 🍋
Salt & pepper to taste
For Serving 🍚
2 cups cooked basmati rice
Fresh coriander 🌿 (chopped)
Red chili (finely diced) 🌶️
Lime wedges 🍋
👩🍳 Instructions:
Heat oil or ghee in a large pan, sauté onion until soft, then add garlic and ginger. Stir in curry powder and turmeric until fragrant. Add chicken pieces and cook until golden on the outside. Pour in coconut milk and soy sauce, reduce heat, and let simmer for 15 minutes until chicken is fully cooked and sauce thickens. Stir in sliced red bell pepper and lime juice, then cook for 2 more minutes. Serve with fluffy basmati rice, garnish with coriander, chili, and lime wedges.
