Triple Reese’s Peanut Butter Cookies
Ingredients:
1 cup unsalted butter, softened
1 cup granulated sugar
1 cup brown sugar, packed
2 large eggs
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups creamy peanut butter
1 1/2 cups chocolate chips or chunks
1 cup mini Reese’s peanut butter cups, halved
Directions:
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
Beat in eggs and vanilla until combined.
In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to wet ingredients.
Fold in peanut butter, chocolate chips, and mini Reese’s cups.
Scoop 2 tablespoons of dough, flatten slightly, and place a dollop of peanut butter and a piece of chocolate in the center. Top with another tablespoon of dough and seal edges.
Bake for 12-14 minutes until edges are golden. Let cool on baking sheet for 5 minutes before transferring to a wire rack.
