Chicken Biryani
Ingredients:
• For the Chicken Marinade:
o 1 lb chicken thighs or drumsticks, skinless
o 1 cup plain yogurt
o 1 tbsp ginger-garlic paste
o 1 tsp turmeric powder
o 1 tsp red chili powder
o 1 tsp ground cumin
o 1 tsp ground coriander
o Salt, to taste
• For the Rice:
o 2 cups basmati rice, rinsed and soaked for 30 minutes
o 4 cups water
o 2-3 green cardamom pods
o 1 cinnamon stick
o 2 cloves
o Salt, to taste
• For the Biryani Layers:
o 2 tbsp ghee or oil
o 1 large onion, thinly sliced
o 1/2 tsp saffron threads soaked in 2 tbsp warm milk (optional)
o Fresh cilantro and mint leaves, chopped
Directions:
1. Marinate the Chicken:
In a large bowl, mix yogurt, ginger-garlic paste, turmeric, red chili powder, cumin, ground coriander, and salt. Add chicken pieces, coating them well in the marinade. Cover and let marinate for at least 30 minutes (preferably 2 hours for better flavor).
2. Prepare the Rice:
In a large pot, bring water to a boil. Add the soaked rice, cardamom, cinnamon, cloves, and salt. Cook until the rice is about 70% done. Drain and set aside.
3. Cook the Chicken:
In a deep pot or large skillet, heat ghee or oil over medium heat. Add the sliced onions and cook until golden brown and crispy. Remove half of the fried onions and set aside for garnishing.
4. Add the marinated chicken to the pot with the remaining fried onions and cook until the chicken is browned and partially cooked (about 10 minutes).
5. Assemble the Biryani:
Layer half of the partially cooked rice over the chicken. Sprinkle with half of the chopped cilantro, mint, and saffron milk if using. Add the remaining rice and top with the rest of the herbs and saffron milk. Sprinkle the reserved fried onions on top.
6. Steam the Biryani (Dum Cooking):
Cover the pot with a tight-fitting lid. Place the pot over low heat and let it cook for 20-25 minutes, allowing the flavors to meld and the rice to cook completely.
7. Serve:
Gently fluff the biryani with a fork and serve hot, garnished with fresh herbs, a side of raita, or cucumber salad. Enjoy!
