Stuffed Salmon with Spinach and Cream Cheese:
Ingredients:
4 salmon fillets (thick, skin removed)
2 cups fresh spinach
4 oz cream cheese (softened)
1/4 cup grated Parmesan cheese
2 cloves garlic (minced)
1 tbsp olive oil
Salt, pepper, and paprika (to taste)
Lemon wedges (for garnish)
Steps:
Prepare the Salmon:
Preheat your oven to 375°F (190°C).
Using a sharp knife, carefully slice each salmon fillet in the center (but not all the way through) to create a pocket for the stuffing.
Make the Filling:
In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
Add spinach and cook until wilted, then remove from heat.
In a bowl, mix the cooked spinach, cream cheese, Parmesan cheese, and a pinch of salt and pepper.
Stuff the Salmon:
Spoon the spinach and cheese mixture into the pockets of the salmon fillets. Be generous but avoid overstuffing.
Season the Salmon:
Sprinkle the fillets with salt, pepper, and paprika for added flavor.
Cook the Salmon:
Heat a large oven-safe skillet over medium heat with a drizzle of olive oil. Sear the salmon fillets for about 2-3 minutes on each side, until lightly golden.
Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the salmon is cooked through.
Serve:
Garnish with lemon wedges and serve hot with your choice of sides like roasted vegetables or rice.
