Lemonade Puppy Chow
Ingredients:
- 9 cups crispy rice cereal squares
- 1 cup powdered sugar
- 1/2 cup white chocolate chips
- 1/4 cup butter
- 1 tablespoon lemon zest (from about 1 lemon)
- 2 tablespoons lemon juice
- 1 teaspoon vanilla extract
- Yellow food coloring (optional)
Directions:
1. Place the crispy rice cereal squares in a large mixing bowl.
2. In a microwave-safe bowl, combine the white chocolate chips and butter. Microwave in 30-second intervals, stirring between each, until fully melted and smooth.
3. Stir in the lemon zest, lemon juice, vanilla extract, and a few drops of yellow food coloring if using, mixing well to combine.
4. Pour the melted lemon white chocolate mixture over the cereal squares and gently stir to coat all the cereal evenly.
5. Add the powdered sugar to a large resealable plastic bag. Carefully add the coated cereal to the bag in batches, sealing the bag and shaking gently to coat the cereal thoroughly with powdered sugar.
6. Spread the coated puppy chow onto wax paper or a baking sheet to cool and set for about 30 minutes before serving.
