No Bake Chocolate Oat Bars
Ingredients:
- 1 cup butter
- 1/2 cup packed brown sugar
- 1 teaspoon vanilla extract
- 3 cups quick cooking oats
- 1 cup semisweet chocolate chips
- 1/2 cup peanut butter
Directions:
1. In a medium saucepan, melt the butter over medium heat.
2. Stir in the brown sugar and vanilla extract, and cook for 2 minutes, stirring constantly until the sugar dissolves.
3. Remove from heat and immediately stir in the quick cooking oats until well combined.
4. Press half of the oat mixture firmly into a greased 9x13 inch pan.
5. In a microwave-safe bowl, combine the chocolate chips and peanut butter. Microwave in 30-second intervals, stirring after each, until smooth.
6. Spread the chocolate and peanut butter mixture evenly over the oat layer in the pan.
7. Crumble the remaining oat mixture over the chocolate layer and press down gently.
8. Refrigerate for at least 2 hours or until firm.
9. Cut into bars and serve.
