Thai Lime Garlic Steamed Fish

Ingredients:

2 whole white fish (such as snapper or sea bass), cleaned and scaled
4 cloves garlic, minced
2 tablespoons fresh lime juice
1 tablespoon fish sauce
1 tablespoon soy sauce
1 teaspoon sugar
2 fresh red chilies, finely sliced
1/4 cup fresh cilantro, chopped
2 stalks lemongrass, lightly crushed
4-6 lime slices
2-3 kaffir lime leaves (optional)
Steamed jasmine rice, for serving
Directions:

Prepare the Fish: Rinse the fish under cold water and pat dry with paper towels. Make a few diagonal slashes on each side of the fish to help the flavors penetrate.
Make the Sauce: In a small bowl, combine the minced garlic, lime juice, fish sauce, soy sauce, sugar, and sliced red chilies. Stir until the sugar dissolves and the ingredients are well mixed.
Steam the Fish: Place the lemongrass stalks and lime slices inside the fish cavity. Lay the fish on a heatproof plate, and pour half of the lime-garlic sauce over the fish. Steam the fish over boiling water for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
Serve: Once cooked, transfer the steamed fish to a serving platter. Pour the remaining sauce over the fish, and garnish with fresh cilantro and kaffir lime leaves if using. Serve immediately with steamed jasmine rice.
