🛒 Ingredients
For the Casserole:
🌭 Good-quality sausages (beef or chicken): 6
🛢 Olive oil: 1 tbsp
🧅 Onion: 1 large, chopped
🧄 Garlic cloves: 2, minced
🥕 Carrot: 1, diced
🍅 Chopped tomatoes: 400g tin
🥄 Tomato purée: 1 tbsp
🌿 Worcestershire sauce: 1 tbsp
🫘 Cannellini beans (or butter beans): 400g tin, drained
🍲 Chicken or beef stock: 300ml
🌿 Dried mixed herbs: 1 tsp
🧂 Salt & black pepper: To taste

1️⃣ Brown the Sausages:
Heat the olive oil in a large casserole dish over medium heat.
Add the sausages and cook for 5 minutes, turning to brown all over. Remove and set aside.
2️⃣ Sauté the Veggies:
In the same pan, add the onion, garlic, and carrot.
Cook for about 5 minutes until softened and fragrant.
3️⃣ Make the Sauce:
Stir in the tomato purée, then pour in the chopped tomatoes, Worcestershire sauce, stock, and dried herbs.
Season with salt and black pepper, and stir to combine.

Return the sausages to the pan and add the drained beans.
Bring to a gentle simmer, cover, and cook on low for 30 minutes, stirring occasionally.
