Bourbon Chicken Recipe
Ingredients

3 lbs boneless skinless chicken thighs
3 tablespoons cornstarch
1/4 cup sliced green onions (or more to taste)
For the Sauce:

1/2 teaspoon grated fresh ginger
4 cloves garlic, minced
1/2 teaspoon red pepper flakes
1/3 cup apple juice
1 1/2 tablespoons honey
1/4 cup brown sugar
1/4 cup ketchup
3 tablespoons apple cider vinegar
1/4 cup water
1/4 cup bourbon
1/4 cup soy sauce
Salt and pepper to taste
Directions

In a small bowl, mix together all the sauce ingredients (grated ginger, garlic, red pepper flakes, apple juice, honey, brown sugar, ketchup, apple cider vinegar, water, bourbon, and soy sauce) until well combined.
Place the chicken thighs in a slow cooker and pour the sauce over the top, ensuring the chicken is fully coated.
Cover and cook on low for 6-7 hours or on high for 3 hours until the chicken is tender.
Once the chicken is cooked, remove it from the slow cooker, chop it into bite-sized pieces, and cover to keep warm.
In a separate bowl, mix 3 tablespoons of water with the cornstarch to create a slurry.
Turn the slow cooker to high and whisk the cornstarch slurry into the sauce. Cover and cook for about 10 minutes, stirring occasionally, until the sauce has thickened.
Return the chopped chicken to the slow cooker, stir to coat it in the sauce, and add in the sliced green onions.
Serve the chicken over rice.
