Chocolate peanut butter stuffed cookies
ingredients
chocolate dough:
▢ ½ cup (113 g) salted butter, softened
▢ ¼ cup (64 g) creamy peanut butter
▢ ½ cup (106 g) granulated sugar (plus extra for dipping)
▢ ½ cup (106 g) lightly packed brown sugar
▢ ½ teaspoon baking soda
▢ ¼ teaspoon salt
▢ 1 teaspoon vanilla extract
▢ 1 large egg
▢ 1 large egg yolk
▢ 1 ½ cups (213 g) all-purpose flour
▢ ½ cup (43 g) natural unsweetened cocoa powder
peanut butter filling:
▢ ¾ cup (191 g) peanut butter, creamy or crunchy
▢ ¾ cup (86 g) powdered sugar
instructions
1. preheat oven to 350°f (175°c). line baking sheets with parchment paper.
2. for the filling, mix peanut butter and powdered sugar in a small bowl until smooth. scoop into 1-inch balls and chill.
3. in a large bowl, cream butter, peanut butter, and both sugars until fluffy. add baking soda, salt, vanilla, egg, and yolk; mix well.
4. stir in flour and cocoa powder until combined.
5. scoop dough into 1.5-inch balls. flatten each ball, place a peanut butter ball inside, and wrap dough around to seal.
6. roll each stuffed cookie in granulated sugar and place on the prepared baking sheet.
7. bake for 9–11 minutes until edges are set. let cool on the sheet for a few minutes before transferring to a wire rack.
8. enjoy warm or cooled. store in an airtight container.
