Thai Chicken Meatballs in Peanut Sauce

Ingredients:

For the meatballs:
1 lb ground chicken
1/4 cup breadcrumbs
2 cloves garlic, minced
2 tablespoons cilantro, chopped
1 tablespoon soy sauce
1 teaspoon ginger, grated
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon vegetable oil, for frying
For the peanut sauce:
1/2 cup creamy peanut butter
1/4 cup soy sauce
2 tablespoons lime juice
2 tablespoons honey
2 cloves garlic, minced
1 teaspoon ginger, grated
1/4 teaspoon red pepper flakes
Water, as needed
For garnish:
Chopped peanuts
Sliced green onions
Chopped cilantro
Directions:

In a large bowl, combine ground chicken, breadcrumbs, minced garlic, chopped cilantro, soy sauce, grated ginger, salt, and black pepper. Mix until well combined.
Shape the mixture into meatballs, about 1 inch in diameter.
Heat vegetable oil in a large skillet over medium heat. Add the meatballs and cook until golden brown on all sides and cooked through, about 10-12 minutes. Remove from the skillet and set aside.
In the same skillet, add peanut butter, soy sauce, lime juice, honey, minced garlic, grated ginger, and red pepper flakes. Stir until well combined and smooth. If the sauce is too thick, thin it out with water, 1 tablespoon at a time, until desired consistency is reached.
Return the cooked meatballs to the skillet and toss to coat with the peanut sauce. Cook for an additional 2-3 minutes, until the meatballs are heated through and the sauce is thickened.
Serve the Thai chicken meatballs in peanut sauce garnished with chopped peanuts, sliced green onions, and chopped cilantro. Enjoy!
