🛒 Ingredients:
🍗 For the Chicken:
1.5 lbs boneless, skinless chicken thighs or breasts, cut into chunks
Salt & pepper, to taste
2 tbsp cornstarch (for a light crisp)
1–2 tbsp oil (for searing)
🌶️🥥 For the Sauce:
1 tbsp oil
3 cloves garlic, minced 🧄
1 tsp fresh ginger, grated 🌿
1/2 cup Thai sweet chili sauce 🌶️
1/2 cup full-fat coconut milk 🥥
1 tbsp soy sauce or fish sauce 🐟
Juice of 1/2 lime 🍈
🌿 Garnishes (Optional but Recommended):
Chopped scallions or cilantro 🌿
Toasted sesame seeds
Extra lime wedges
Thinly sliced red chili or chili flakes (for extra heat) 🔥
🔪 Instructions:
Step 1: Prepare & Sear the Chicken
Season chicken with salt, pepper, and toss with cornstarch.
Heat oil in a large skillet over medium-high heat.
Sear chicken until golden and cooked through (~4–5 minutes per side). Remove and set aside.
Step 2: Make the Sweet Chili Coconut Sauce
In the same skillet, reduce heat slightly and add 1 tbsp oil.
Sauté garlic and ginger until fragrant (30 seconds).
Add sweet chili sauce, coconut milk, soy/fish sauce, and lime juice. Stir well and simmer for 2–3 minutes.
Step 3: Combine & Glaze
Return chicken to the pan and toss in the sauce until fully coated.
Simmer for another 2–3 minutes, letting the sauce slightly thicken and glaze the chicken.
Step 4: Serve & Garnish
Serve hot over jasmine rice, noodles, or lettuce cups. 🍚🥬🍜
Sprinkle with scallions, cilantro, sesame seeds, and extra lime.
