If you love the fried rice from Panda Express or other Chinese place… I have finally perfected my own version of egg fried rice and want to share it with other Chinese food lovers! I PROMISE it tastes JUST like the real thing 🤤 plus it’s very cheap and easy to make.
Recipe:
Cook rice the night before. For the closest flavor to Chinese food restaurants, use jasmine rice. I used brown rice because that’s what I had at the time. Don’t overcook it. I made mine by adding chicken broth instead of water to my crock pot and cooking it on high for 2.5 hours. Be sure to put enough liquid to line up with your finger’s first knuckle. The typical 2:1 water:rice ratio yields mushy rice in my opinion.
Heat up a wok or frying pan to med high to high heat with some canola oil. Add 1 beat egg for every cup of rice you want to cook. Scramble it!
Remove eggs. Add like a tap of sesame oil and a little more canola, then add 1/4 cup cooked frozen mixed veggies and chopped onion for every cup of rice you want to make. You can add a lil garlic if you like. Cook like 2-3 mins.
Add eggs back in, then rice. Add 1 cup at a time and break up any chunks of rice sticking together. Cook like 3 min until rice starts to brown. It’s very important to use high heat and to move fast! Then add a tsp of soy sauce, 1/4 tsp of MSG, 1/4 tsp of salt, 1/4 tsp of pepper, 1/4 tsp of garlic powder for every cup of rice you added. Cook like another 1-2 mins.
Top with green onion. BAM you got Panda Express fried rice at home!!!
