Instructions:
Start by cooking the rice until fluffy and tender. Meanwhile, sautΓ© chopped onions, garlic, and ginger in a pan with oil until fragrant. Add chicken pieces and cook until lightly browned. Toss in the bell peppers and stir in the spices. Pour in coconut milk and let simmer until the sauce thickens and chicken is cooked through. Serve the curry hot over a bed of rice, and sprinkle with fresh cilantro.
