🛒 Ingredients
For the Chicken Curry 🍗
500 g chicken breast, cut into cubes
1 tbsp oil 🫒
1 onion, finely chopped 🧅
2 cloves garlic, minced 🧄
1 tsp grated ginger
1 tbsp curry powder
1 tsp paprika
200 ml coconut milk 🥥 or cream
2 tbsp tomato paste
Salt & pepper to taste
Fresh parsley 🌿 for garnish
For the Spiced Potatoes 🥔
3 medium potatoes, peeled & diced
1 tbsp oil
½ tsp turmeric
½ tsp paprika
Salt & pepper
Fresh herbs for topping
For the Rice 🍚
1 cup basmati rice
2 cups water
Pinch of salt
👩🍳 Instructions
Cook rice in salted water until fluffy, then keep warm. In a skillet, heat oil and sauté onion, garlic, and ginger until fragrant. Stir in curry powder, paprika, and tomato paste. Add chicken cubes and cook until lightly browned. Pour in coconut milk, season with salt and pepper, and let simmer for 10–12 minutes until creamy. Meanwhile, fry diced potatoes in oil with turmeric, paprika, salt, and pepper until golden and crispy. Serve chicken curry with rice and potatoes, garnished with fresh parsley.

Swap chicken for shrimp or tofu for a twist.
Add peas, spinach, or bell peppers to the curry.
Use sweet potatoes instead of regular potatoes.
