Ingredients:
For the Rice:
1 cup long-grain white rice
2 cups water
1/2 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon paprika
For the Shrimp:
1 pound large shrimp, peeled and deveined
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/4 teaspoon paprika
1/8 teaspoon red pepper flakes
Salt and pepper to taste

1 ripe avocado, sliced
1 tomato, diced
Fresh cilantro, chopped
Lime wedges
Instructions:
Cook the Rice:
In a medium saucepan, combine rice, water, salt, cumin, and paprika.
Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until water is absorbed.
Fluff with a fork.
Cook the Shrimp:
Heat olive oil in a large skillet over medium-high heat.
Season shrimp with garlic powder, paprika, red pepper flakes, salt, and pepper.
Cook shrimp for 2-3 minutes per side, or until pink and cooked through.
Assemble the Stack:
Layer cooked rice in a bowl or plate.
