Crispy Chicken Wontons with Sweet and Spicy Cream Sauce

Ingredients:
For the Chicken Filling:
1 lb ground chicken
1/2 cup finely chopped green onions
1/4 cup finely chopped water chestnuts
2 cloves garlic, minced
1 tablespoon soy sauce
1 tablespoon oyster sauce
1 teaspoon sesame oil
1/2 teaspoon ground ginger
1/4 teaspoon white pepper
1/4 cup chopped cilantro
For the Wontons:
40 wonton wrappers
1 egg, lightly beaten (for sealing)
Vegetable oil, for frying
For the Sweet and Spicy Cream Sauce:
1/2 cup heavy cream
1/4 cup mayonnaise
2 tablespoons sriracha (or more, to taste)
1 tablespoon honey
1 tablespoon rice vinegar
1 teaspoon soy sauce
1/2 teaspoon sesame oil
1/4 teaspoon garlic powder
Pinch of red pepper flakes (optional)
Chopped green onions, for garnish
Instructions:
1. Prepare the Chicken Filling: In a large bowl, combine the ground chicken, green onions, water chestnuts, garlic, soy sauce, oyster sauce, sesame oil, ginger, white pepper, and cilantro. Mix well until everything is thoroughly combined.
2. Assemble the Wontons: Lay out a wonton wrapper on a clean, flat surface. Place about 1 teaspoon of the chicken filling in the center of the wrapper. Dip your finger in the beaten egg and lightly brush the edges of the wonton wrapper. Fold the wrapper in half to form a triangle, pressing the edges firmly to seal. You can crimp the edges for a decorative look, or simply press them firmly together. Repeat with the remaining wonton wrappers and filling.
3. Fry the Wontons: Heat about 2 inches of vegetable oil in a large skillet or wok over medium-high heat. Once the oil is hot (a drop of batter should sizzle immediately), carefully add the wontons in batches, being careful not to overcrowd the pan. Fry for 2-3 minutes per side, or until golden brown and crispy. Remove the wontons with a slotted spoon and place them on a wire rack or paper towel-lined plate to drain excess oil.
4. Make the Sauce: While the wontons are frying, whisk together the heavy cream, mayonnaise, sriracha, honey, rice vinegar, soy sauce, sesame oil, garlic powder, and red pepper flakes (if using) in a small bowl until smooth and creamy.
5. Serve: Arrange the crispy chicken wontons on a serving platter. Drizzle generously with the sweet and spicy cream sauce and garnish with chopped green onions before serving immediately. Enjoy!
