🇮🇹 Risotto alla Zucca (Pumpkin Risotto)
Creamy risotto blended with sweet pumpkin and topped with crispy herbs – a cozy autumn favorite!
Ingredients:
• 200 g arborio rice
• 300 g pumpkin, diced
• 700 ml vegetable broth
• 1 small onion, chopped
• 40 g Parmesan, grated
• 30 g butter
• 1 tbsp olive oil
• Fresh rosemary or sage (optional)
• Salt and pepper
Instructions:
1️⃣ Sauté onion in oil and half the butter. Add pumpkin and cook until soft.
2️⃣ Add rice, toast for 2 mins, then gradually stir in hot broth.
3️⃣ When creamy, stir in Parmesan, remaining butter, and herbs.
4️⃣ Season to taste and serve warm.
