My version of Korean Japchae
Japchae is one of my favorite noodle recipe. Everyone loves it and it’s a crowd pleaser. Sweet and flavorful!
Ingredients:
Beef and marinade:
1/2 pound beef flanks sliced in strips thinly
1 tbsp soy sauce
1 tsp rice wine
1 tsp brown sugar
1/2 tsp black pepper
1/2 tsp garlic powder
1 tsp sesame oil
Noodles and veggies:
1 pack Korean sweet potato noodles
1 cup sliced carrots
2 cups sliced mushrooms
1 cup sliced bell peppers
1 onions sliced
1 pack baby spinach, washed and sautéed
2 eggs beaten, fried and sliced
Sauce:
1/4 cup soy sauce
2 tbsp honey or sugar
2 tbsp sesame oil
1/4 tsp black pepper
1 tbsp sesame seeds
*Oil for sautéing
Procedures:
Marinate the beef in a large bowl. Set aside for at least 30 minutes. So while waiting….
Mix the sauce ingredients in a small bowl. Set aside.
In a large skillet, add 1 tablespoon oil, saute onions till translucent. Add mushrooms and saute till tender. Set aside.
Add more oil and saute the carrots till tender. Set aside.
Add oil and saute the bell peppers till tender. Set aside.
Add oil, stirfry the spinach. Set aside.
Cook the noodles in boiling water until softened to its desired consistency. Coat with 1 tbsp oil and mix well. Set aside.
In the same pan, add 2 tablespoons oil and fry the marinated beef. Cook until tender. Set aside.
In a large bowl, add the cooked noodles. Then, add the stirfried veggies one at a time (mushrooms, onions, carrots, bell peppers and spinach). Then, sliced fried eggs and the fried beef. Pour the sauce. Mix well till combined. Garnish with extra sesame seeds. Enjoy!
