Thai Lemongrass & Lime Shrimp Soup
Ingredients
1 lb shrimp (peeled and deveined)
4 cups vegetable or chicken broth
2 stalks lemongrass (chopped and smashed)
4-5 kaffir lime leaves (torn)
2-3 red chilies (sliced, adjust to taste)
4 cloves garlic (minced)
1-inch piece of ginger (sliced)
Juice of 2 limes
1 tablespoon fish sauce (or soy sauce for a vegetarian option)
Fresh cilantro (for garnish)
Salt and pepper (to taste)
Instructions
1. Prepare the Broth
Combine Ingredients: In a large pot, combine the broth, chopped lemongrass, kaffir lime leaves, sliced chilies, minced garlic, and sliced ginger.
Simmer: Bring to a boil, then reduce heat and let it simmer for about 10-15 minutes to infuse the flavors.
2. Cook the Shrimp
Add Shrimp: Strain the broth to remove the solids and return the clear broth to the pot. Add the shrimp and cook for about 3-5 minutes until they are pink and cooked through.
3. Finish the Soup
Season: Stir in lime juice and fish sauce. Adjust seasoning with salt and pepper to taste.
4. Serve
Plate the Dish: Serve hot, garnished with fresh cilantro.
