Shrimp (peeled & deveined)
Olive oil
Garlic powder
Paprika or chili powder
Salt & pepper
Cooked white rice or cauliflower rice
Sweet potato (cubed and roasted)
Avocado (sliced)
Lime (for squeezing)
Fresh cilantro (chopped)
Instructions
Roast sweet potato cubes with olive oil, salt, pepper, and paprika until tender and golden. Sauté the shrimp in a pan with oil and spices until pink and slightly crispy. Fill bowls with rice, then top with sweet potatoes, shrimp, avocado slices, and a squeeze of fresh lime. Sprinkle chopped cilantro over the top and enjoy warm or chilled!
Notes & Variations
Swap shrimp with grilled chicken or tofu. Add a drizzle of spicy mayo or tahini-lime dressing for extra flavor!
