Ingredients:
For the Chicken:
2 boneless chicken breasts 🍗
1 tbsp olive oil 🫒
1 tsp lemon juice 🍋
½ tsp oregano 🌿
½ tsp garlic powder 🧄
Salt & pepper to taste
For the Bowl:
1 cup cooked basmati rice 🍚
½ cup canned chickpeas, drained 🌱
½ cup Kalamata olives 🫒
½ cucumber, sliced 🥒
For the Tzatziki Sauce:
½ cup Greek yogurt 🥄
½ cucumber, grated and drained 🥒
1 clove garlic, minced 🧄
1 tbsp lemon juice 🍋
1 tbsp fresh dill, chopped 🌿
Salt & black pepper to taste
Instructions:
Marinate the Chicken: Mix olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Coat the chicken and let it marinate for at least 10 minutes.
Grill the Chicken: Heat a pan or grill and cook the chicken for about 5-6 minutes per side until golden brown and fully cooked. Slice into strips.
Prepare the Tzatziki: Combine Greek yogurt, grated cucumber, garlic, lemon juice, dill, salt, and pepper. Mix well.
Assemble the Bowl: Add cooked rice to a bowl, arrange the grilled chicken, chickpeas, olives, and cucumber slices on top.
Serve & Enjoy: Add a generous scoop of tzatziki and drizzle with olive oil.
