Asian Chicken Cranberry Salad 🥗

Ingredients:

2 cups cooked chicken, shredded
4 cups mixed greens (romaine, spinach, or cabbage mix)
1/2 cup dried cranberries
1/2 cup sliced almonds
1/2 cup shredded carrots
1/4 cup chopped green onions
1/2 cup crispy chow mein noodles (optional)
1 tbsp sesame seeds (optional)

Dressing:

1/4 cup olive oil
2 tbsp rice vinegar
1 tbsp soy sauce
1 tbsp honey
1 tsp sesame oil
1/2 tsp garlic powder
1/2 tsp ginger powder

Directions:

1️⃣ In a large bowl, combine shredded chicken, mixed greens, cranberries, almonds, carrots, green onions, and chow mein noodles.
2️⃣ In a small bowl, whisk together olive oil, rice vinegar, soy sauce, honey, sesame oil, garlic powder, and ginger powder.
3️⃣ Drizzle dressing over the salad and toss well to coat.
