Beef & Wild Rice Soup 🥣
Ingredients:
1 lb beef stew meat, cut into small pieces
1 tablespoon olive oil
1 small onion, chopped
2 carrots, peeled and diced
2 celery stalks, chopped
3 cloves garlic, minced
6 cups beef broth
1/2 cup wild rice (uncooked)
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup mushrooms, sliced (optional)
1/2 cup heavy cream (optional for creamy version)
Fresh parsley for garnish (optional)
Directions:
In a large pot, heat olive oil over medium heat. Add beef pieces and brown on all sides, about 5–7 minutes.
Add onion, carrots, and celery. Cook for another 5 minutes, stirring often, until vegetables start to soften.
Stir in garlic and cook 1 minute until fragrant.
Add beef broth, wild rice, thyme, rosemary, salt, pepper, and mushrooms if using. Bring to a boil.
Reduce heat to low, cover, and simmer for 45–50 minutes, or until the beef is tender and rice is cooked.
For a creamy version, stir in heavy cream and let it heat through for another 5 minutes.
Taste and adjust seasoning if needed. Garnish with fresh parsley and serve warm.
