Ingredients
For the Garlic Chicken:

2 boneless, skinless chicken breasts, cubed 🍗
1 tbsp olive oil 🫒
1 small onion, chopped 🧅
2 garlic cloves, minced 🧄
½ red bell pepper, diced 🌶
2 tbsp soy sauce 🥢
½ tsp salt & pepper 🧂
½ tsp paprika 🌶
1 tsp lemon juice 🍋
For the Rice:

1 cup white rice 🍚
2 cups water 💧
½ tsp salt 🧂
For the Salad:

1 cup lettuce, chopped 🥬
1 tomato, diced 🍅
½ carrot, julienned 🥕
1 tbsp olive oil 🫒
½ tsp lemon juice 🍋
½ tsp salt & pepper 🧂
Instructions
Cook the Rice: Bring water to a boil, add rice and salt, cover, and simmer for 15 minutes until fluffy.
Prepare the Chicken: Heat olive oil in a pan, sauté onions and garlic until fragrant. Add chicken, season with salt, pepper, and paprika, and cook until golden brown.
Add Flavor: Stir in bell pepper, soy sauce, and lemon juice. Cook for another 5 minutes until everything is well combined.
Make the Salad: Toss lettuce, tomato, and carrot with olive oil, lemon juice, salt, and pepper.
