Greek Chicken and Lemon Rice

Ingredients:

• 4 boneless, skinless chicken breasts
• 2 tablespoons olive oil
• 2 teaspoons dried oregano
• 2 teaspoons garlic powder
• 1 teaspoon onion powder
Salt and pepper to taste
• 1 lemon, juiced and zested
• 1 cup long-grain rice
• 2 cups chicken broth
• 1/4 cup fresh parsley, chopped

Instructions:

1. Preheat your oven to 400°F (200°C).
2. In a small bowl, mix together olive oil, dried oregano, garlic powder, onion powder, salt, pepper, lemon juice, and lemon zest.
3. Rub this mixture all over the chicken breasts, ensuring they are well coated.
4. Place the chicken in a baking dish and bake for 25–30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
5. While the chicken is baking, rinse the rice under cold water until the water runs clear.
6. In a medium saucepan, bring the chicken broth to a boil.
7. Add the rinsed rice, reduce the heat to low, cover, and simmer for 15–20 minutes, or until the rice is tender and the liquid is absorbed.
8. Fluff the rice with a fork and stir in the chopped parsley and a squeeze of lemon juice for added flavor.
9. Serve the baked chicken over a bed of lemon rice, garnished with additional parsley and lemon wedges if desired.
