Blackened Chicken and Corn Salsa Bowls
Ingredients:
1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
1 tbsp olive oil
1 tbsp blackened seasoning (paprika, garlic powder, onion powder, cayenne pepper, black pepper, oregano)
1 cup corn kernels (fresh, frozen, or canned)
1 red bell pepper, diced
1/2 red onion, diced
1 jalapeno pepper, seeded and minced (optional)
1/2 cup chopped cilantro
1/4 cup lime juice
1 tbsp olive oil
Salt and pepper to taste
1 (15 ounce) can black beans, rinsed and drained
1 avocado, diced
Cooked quinoa or rice, for serving
Instructions:
1. Season the chicken cubes generously with the blackened seasoning. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
2. In a medium bowl, combine the corn, red bell pepper, red onion, jalapeno (if using), cilantro, lime juice, and olive oil. Season with salt and pepper to taste. Gently toss to combine. This is your corn salsa.
3. To assemble the bowls, divide the cooked quinoa or rice among four bowls. Top with the blackened chicken, corn salsa, and black beans. Finally, garnish with diced avocado.
4. Serve immediately and enjoy!
