Quick Jamaican Curry Chicken for Busy Nights 🍛🌶️

Ingredients
3 lbs boneless chicken thighs, chopped

1 tbsp browning sauce (optional)

2 tbsp curry powder

1 tsp smoked paprika

2 tsp garlic powder

2 tbsp olive oil

1 medium onion, diced

1 large carrot, diced

1 bell pepper, sliced

1 scotch bonnet or ½ tsp chili flakes

2 cups chicken stock

1 cup coconut milk

2 potatoes, diced

1 tsp thyme

Salt and pepper to taste

Instructions
Marinate chicken.
Mix chicken with browning, curry powder, paprika, garlic powder, salt, and pepper. Let sit 30 minutes.

Sauté veggies.
In hot oil, cook onion, bell pepper, and carrot until soft.

Add chicken and potatoes.
Brown chicken for 5 minutes, then stir in potatoes and scotch bonnet.

Simmer the curry.
Pour in stock and coconut milk. Simmer for 20 minutes until thick and tender.

Serve hot.
Dish up with rice or naan for a hearty, satisfying meal.
