Grilled Fish Tacos with Spicy Mayo & Pico de Gallo 🌮
Ingredients:
For the Fish:
1 lb white fish fillets (such as cod, halibut, or tilapia)
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
For the Pico de Gallo:
2 tomatoes, diced
1/4 red onion, diced
1/4 cup chopped cilantro
1 jalapeño, seeded and minced (optional)
1 lime, juiced
Salt and pepper to taste
For the Spicy Mayo:
1/2 cup mayonnaise
1 tablespoon sriracha
1 teaspoon lime juice
1/4 teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon black pepper
Instructions:
Prep the Fish: In a bowl, combine fish with olive oil, paprika, garlic powder, salt, pepper, and cayenne pepper (if using). Toss to coat.
Grill the Fish: Grill the fish over medium heat for 2-3 minutes per side, or until cooked through.
Make the Pico de Gallo: In a bowl, combine tomatoes, red onion, jalapeño (if using), cilantro, lime juice, salt, and pepper. Mix well.
Make the Spicy Mayo: In a small bowl, whisk together mayonnaise, sriracha, lime juice, garlic powder, salt, and pepper.
Assemble the Tacos: Warm tortillas and fill with grilled fish, pico de gallo, and spicy mayo.
